Cà tím cắt cuống bổ đôi theo chiều dọc, khoét phần ruột bên trong trái cà, rồi ướp cà với một ít dầu olive, muối và tiêu đen sau đó đem đi nướng trong vòng 10 phút ở 190 độ C.
Bắc nồi lên bếp cho vào một ít dầu olive, dầu nóng thì cho hành tây cắt hạt lựu vào xào chín, tiếp theo cho tiếp phần ruột cà cắt vuông vào nồi xào chín. Thêm 1/2 chén diêm mạch (quinoa) rồi cho thêm 1 chén nước dùng rau củ và đậy nắp nấu sôi trong 15 phút.
Cho hỗn hợp mới nấu vào phần cà tím đã nướng chín, thêm một lớp phô mai Mozzarella, một lớp tương cà sốt sau đó đi nướng ở 190 độ C trong vòng 20-25 phút.
Sau đó thì lấy cà tím ra khỏi lò và thưởng thức ngay thôi nè.
