Đun nóng ba muỗng cà phê dầu ăn, phi hành tím băm thơm, cho bạch tuộc vào xào chín, đổ bạch tuộc ra chén để riêng.
Dùng lại nồi đó, đổ vào khoảng 2-3 chén nước lọc, thêm củ cải trắng vào, tiếp tục đun sôi đến khi củ cải mềm.
Thì cho kim cho vào đun cùng, đun sôi thêm khoảng 3-5 phút, nêm 1 muỗng cà phê muối, 1/2 muỗng nước mắm, 1 muỗng cà phê đường. Vì nước kim cho đã có sẵn phần gia vị mặn và chua, nên chỉ cần nêm nhạt.
Tiếp tục cho giá đỗ, bạch tuộc vào đun cùng, để sôi lại một lần nữa thì tắt bếp. Rắc hành lá cắt nhỏ vào.
